This workshop focuses on the traditional techniques for preparing seasonal bamboo shoots. Participants will learn proper processing and lye removal methods, culminating in the preparation of shelf-stable bamboo shoot preserves in jars and the creation of traditional simmered butterbur (kyarabuki). The session includes a practical lunch featuring these seasonal ingredients, demonstrating how to incorporate preserved foods into daily meals. Participants will take home their prepared bamboo shoot jars and kyarabuki.
